Baked Lemon Pepper Tofu

If you practice Meatless Mondays,  here is a new recipe  option for your repertoire. For those of you who have never tried tofu, or for those of you who have only tried tofu with soy based marinades, here is a new twist. Serve with vegetables and a side of quinoa or brown rice.

Baked Lemon Pepper Tofu

1 block extra firm tofu

1 clove garlic pressed

2 Tbs olive oil

4 Tbs lemon juice

zest of 1 lemon

2 Tbs mirin

1/4 tsp crushed red pepper flakes

Sea salt and black pepper to taste

Preheat oven to 350.  Slice tofu into 1/2 inch slices.  Mix together all the other ingredients.  Marinate the tofu for 30 minutes.  Lay tofu side by side on a baking tray.  Bake 10-15 minutes per side.
