Sweet Potatoes

I LOVE sweet potatoes.  We eat them all year round, but as the weather gets colder, they become a regular staple at the dinner table.  I often make extra and eat one after a big workout.

They are packed with nutrients including beta carotene, vitamin C, magnesium, potassium and iron.  Sweet potatoes are high in fiber and low on the glycemic index scale.  I encourage you to eat them often as a compliment to any meal.  Try them baked, mashed and roasted.  They are delicious and very satisfying.
